Vickie's Chicken Stuffers
- The Southern Redneck version of Sausage
Stuffers. Plain and BBQ Chicken Stuffers! A quick and easy
appetizer to serve at any party.
Preparation
Time: 20 minutes
- Serves: 10 to 20 @ 2 to 3 stuffers per person.
- Makes: 30 stuffers

- Ingredients:
- 1 lb chicken
- 2 tblspn butter/margarine
- 16 oz package of won ton wrappers
- 1½ cup Colby Jack Cheddar
- ¼ cup crumbled bacon
- ¼ cup BBQ
- ¼ tspn pepper
- 1 tspn salt

- Directions:
- Pre-heat oven 350° F
- Cut slightly frozen chicken into small cubes, about ¼
inch square.
- In a large skillet, melt butter and cook chicken until done.
- Before removing from heat, add salt, pepper and bacon. Mix
thoroughly and warm for about 5 minutes.
- Remove from heat and add cheese. Mix thoroughly and allow
heated chicken to melt the cheese.
- Remove ½ chicken filing from the skillet.
- Mix BBQ with the chicken remaining in the skillet.
- While chicken is cooking, spray a mini-muffin tin and insert
the won ton wrappers to form a small cup.
- Bake for 5 minutes in preheated oven.
- Allow wrappers to cool.
- Fill ½ won tons with plain chicken filling and the
other ½ with BBQ chicken filling.
- Bake 10 minutes until bubbly.
- Remove from muffin pan and place on serving dish.

- Serve:
- Remove from muffin pan and place on serving dish.
- Serve warm

- Alternatives:
- Consider using your favorite cheese in place of the Colby
Jack.
- Dice ½ small onion and saute with the chicken.
- Add some color and cube 1 small tomato to add to the chicken
once it's removed from the heat.
